Some Recipes of Typical Peruvian Foods:

Ceviche de Pescado
1 kg. filets fish
2 Crushed Garlic
4 yellow fresh chilis
2 rocotos
10 lemons
150 gr onion
Lettuce, camotes, corn, potatoes, salt and pepper.

Cut the fish in bits, put them in a big serving dish. Season with salt, garlic, and chili. Add the lemons juice, let it settle. Add the onion choped in small wheels. Serve with lettuce, camote, potatoes, corn, add grinded chilli.

Grees Tamales
1kg shelded corn
250 gr. fat (or oil)
1/2 pkg small onion, cilantro, chili, pepper, salt and seasoning.

2 boiled eggs

Grind the corn, cilantro, samll aninon and chili, then pour this mixture over a serving dish and season with salt, pepper and seasoning. Heat the fat and add it to the dish. Then wrap in corn husk. Boil for 40 minutes

Pachamanca
1/2 goat - 1 lamb leg
10 porks ribs - chicken
10 beefs
10 humitas - potatoes
10 camotes
10 gooses
10 corns
300 gr grinded chili (panca)
100 gr pepper
500 gr cheese (paria)
Banana leafs
Paico and salt

Do a regular hole in the ground and put stones (previously cleaned) at the bottom. While, heat another stones. This operation must be realized near the hole because then, the stones, must be placed in that hole forming.
Floorings from bottom to top.
Put the meals floor by floor, at first the camotes, then gooses and potatoes. At top put some heat stones.
On the second floor, put the meats seasons with chili, salt and pepper. Over this meats spread paico. Between each floor put the bananas leafs to protect the cooking of the meals. Put more stones at the fire.
On the next floor put the humitas already cooked, the bolied broad beans, cuyes, cheese and corns. Cover with more bananas leafs and put a cloth (very pressed) over. At the top, cover all with dried soil and a wool poncho. Let it cook for 3 or 4 hours aprox.
